On the island of Ilhabela, off the coast of São Paulo, A.Mar was born from Rodolfo Vilar’s dream of uniting the knowledge of caiçara fishermen with gastronomic innovation. Among nets, smoke, and fermentations, the project transforms ancient fish preservation techniques into a new form of culinary craftsmanship. In his seaside laboratory, tuna salami, bottarga, and smoked creations become expressions of research, respect, and a profound love for the ocean.
